Mari is a firm believer that drinking should involve all five senses, and while she is not a casual drinker, her virgin tastebuds might be the reason on why she is able to acquire such accolades like winning the 2009 Diageo World Class Cocktail Competition in London,  2013 Gin Connoisseur Program in France, a finalist at the 2015 007 Belvedere Challenge in Sydney and bagging the top prize at the 2016 Seven Star Train Cocktail Recipe Competition in Japan.


Still she finds the classics and creating original cocktails, and stood out among Japanese bartenders who have showed creativity in drink creation. Take a flight to Tokyo to visit her as she serves you with her signature drink, the electric pink Tokyo Joe -- a drink made with Bombay Sapphire base with ume (Japanese plum) liqueur, cranberry juice, Drambuie and lemon. It is served in an attention-grabbing vessel the resembles the bowl of a martini glass nestling on a 16 cm-tall silver picket fence. But her entusiasm for innovation hasn't turned her back on the ol' basics, saying, "I studied hard for years so that I'd be able to match any customer demands."


I've been a witness myself when she showed us her priceless bartender kit, which included some super cool and super sharp knives for making garnishes, which originally came from a much bigger knife, only, its current shape evolved through many years of use and sharpening. Intense.

The class where I was willingly part of yesterday during one of Manila Pen's test events, was crazy fun! When you attend, expect that Mari San will cover these award-winning drinks: the Matcha Martini, Hennessy Negroni and Blood and Sand, and in keeping with the festive season, The Peninsula Hotels' Cocktail and Mocktail of Hope where part of the proceeds raised benefit Make-A-Wish Foundation Philippines which grants the wishes of children with life-threatening illnesses.
