Easy and Affordable Japanese Sukiyaki Recipe

So anyway, I don't need a giddy up introduction on sukiyaki. But I just happen to check it out on google and clicked on to the image results. I was stunned (and hungry all of a sudden) to see the different ways of making sukiyaki and how it looked like once it has been made. Just incredible.

Still, apart from the millions of bloggers around the world who have already shared their own versions of sukiyaki, I would just like to share my sukiyaki recipe which I think was okay for a first attempt. Although I have been making sukiyaki several times on an electric rice cooker-like stove. It's just basic sukiyaki ingredients put altogether, leaving it for a few minutes and voila! A quicker but kind of drier version of sukiyaki to enjoy which I find perfect while drinking or as a rice topping. This sukiyaki recipe, on the other hand, resembles the one that is mostly ordered in restaurants. A mixture of healthy veggies, noodles, thin slices of meat in a delectable beef broth that goes very well and in perfect harmony.

The good thing about sukiyaki is that you can basically put anything you want and you can find good replacements to some ingredients, which was made possible because it was according to my father's preference during this time (he provided everything, but I did all the preparation). And because I did the prepping, I'm officially calling it my own.

Here's a doable sukiyaki recipe that's easy on a budget but definitely worth trying if you wanted to serve something different for lunch or dinner. This one however, was made for a bigger group, but you can just adjust the measurements based on the number of people who will be eating in your home.

Easy and Affordable Japanese Sukiyaki Recipe
(good for 10 to 12 people)

For the soup base:
1 c. Kikkoman Soy Sauce
13 c. of water
1 c. of sugar
2 tbsp. Mirin
1/4 c. of Dashida beef stock powder
1 tsp. MSG
2 stalks of leeks (white part), sliced into diagonal pieces
1 white onion, peeled and sliced into 1/2 inch quarters

Other ingredients:
1 kl. thinly sliced beef (sukiyaki cut)
1/2 kl. thinly sliced pork (same cut)
1 block of tofu, sliced into cubes
1 carrot, julienned
Chinese cabbage, chopped into big pieces
Shitake mushrooms, sliced
2 stalks of leeks (green part), sliced into 1-inch diagonal pieces
Beaten raw eggs for dipping
1 pack of Thai Noodles

Combine all the ingredients for the soup base and simmer for about 15 minutes until the soup becomes fragrant with the leeks and onions. You can add about 2 tbsp of Japanese Sake if you have it as well, to add more flavor. Set aside.

Prepare and plate all the other ingredients, as I did here and shown on these pictures. You just have to take some time with washing the veggies and cutting them into bite size portions. Just take a little more time also for plating the meat to make it look more pleasurable to eat (and because Japanese food for me always has to look pretty).

You are also free to marinate your meat in some soy sauce should you wish to make it more flavorful, but for me I didn't have to do that because the soup base is already salty enough for me.

We also had Thai noodles for this recipe which I think is good because it holds it shape very well and doesn't get mushy when cooked for a long time. But you can settle for good ol' vermicelli noddles as well.

How to eat (individually) in different ways:

1. Hot pot style: searing the meat for a quick minute while heating the soup separately, putting all the veggies that you wish to have to wilt them for a bit. Place everything on your bowl and have a beaten raw egg on the side for dipping.

2. Another idea is putting all the ingredients on your bowl and finally hitting everything with boiling hot broth to quickly heat everything. Top it with one raw egg and enjoy.  
* I like this better because I love the texture of the meat when I do this. The texture is softer but not entirely cooked, plus the veggies are hated through but still has that crunch to it :)
